Yields: 9 Cinnamon Rolls
Ingredients:
Dough:

2 cups plain Greek yogurt (non-fat or full-fat)

2 cups gluten free self-rising flour
(or make your own: 1 cup all-purpose flour + 1½ tsp baking powder + ¼ tsp salt) (or you can use 2 cups almond flour instead to keep it low carb)
Filling:

2 tablespoons softened butter (or melted coconut oil)

2 tablespoons brown sugar or brown sugar substitute

1 tablespoon cinnamon

1 tablespoon vanilla extract
Cream Cheese Frosting:

2 oz cream cheese, softened

2 tablespoons butter, softened
-
2–3 tablespoons powdered sweetener

1 teaspoon vanilla extract

1–2 teaspoons almond milk (for thinning, if needed)
Directions:

Preheat oven to 350°F (175°C). Line a baking dish or pie pan with parchment or lightly grease it.

In a bowl, mix the Greek yogurt and self-rising flour until it forms a dough. Transfer to a lightly floured surface and knead 1–2 minutes until smooth and elastic.Roll the dough out into a rectangle, about ¼ inch thick.

Mix butter, cinnamon, vanilla and brown sugar, then spread evenly over the buttered dough.

Roll the dough tightly from the long side to form a log. Slice into 6–8 rolls and place in the prepared baking dish.

Bake for 25–30 minutes, or until golden brown and cooked through.

While rolls bake, beat together frosting ingredients until smooth. Spread over warm rolls right out of the oven or once slightly cooled.
