Ingredients:

1 cup cottage cheese (full-fat or low-fat, your call)

1/2 cup shredded cheddar cheese (or any melty cheese like Monterey Jack)

1 tsp taco seasoning (or mix of chili powder, cumin, paprika, garlic powder)

1-2 tbsp salsa or diced tomatoes with green chilies (like Rotel)
Taco meat:

1 pound ground beef

1/2 tsp onion powder

1/2 tsp garlic powder

Salt and pepper
Directions:

Toss the cottage cheese in a blender or food processor and blend until completely smooth and creamy. This step is key – it takes away the curdy texture and turns it into a queso base.

Blend in the taco seasoning and salsa. Pulse again to mix.

Microwave for 30-60 second bursts, stirring in between, until melty and smooth or heat over low heat, stirring until cheese is melted and queso is creamy.

In a separate pan, cook your ground beef.

Add more seasoning, salsa, or hot sauce to taste. If it’s too thick, stir in a splash of milk or water to thin.
