3 Low Carb 90 Second Mug Cakes



 

 

Fudgy Chocolate Cake

Servings: 1

Ingredients:

  • 1 tbsp coconut flour

  • 1 tbsp cocoa powder

  • 1/2 tsp baking powder

  • 1 tbsp butter

  • 1 egg

  • 2 tbsp sweetener

  • Dash of salt

  • Optional: 1/8 tsp instant coffee

Chocolate glaze

Directions:

  1. Add your butter into a mug and melt in the microwave for 20-30 secs

  2. Add eggs and whisk in.

  3. Add all of your dry ingredients and mix super well until incorporated

  4. Microwave for 50-55 seconds – It’s best for the cake to be slightly wet (you don’t want a dry cake)

  5. Top with your favorite ice cream or eat with a glaze.

Vanilla Cake

Servings: 1

Ingredients:

  • 1 tbsp butter, melted  

  • 3 tbsp almond flour 

  • ½ tsp baking powder 

  • 1 tbsp powdered sweetener 

  • 2 tbsp egg whites (or 1 natural egg) 

  • ½ tsp vanilla extract 

  • Dash of cinnamon

Cream Cheese Glaze:

  • 1 oz softened cream cheese 

  • 1 tsp sweetener of choice 

  • ¼ tsp vanilla extract

  • Strawberries to garnish

Directions:

  1. Add your butter into a mug and melt in the microwave for 20 seconds.

  2. Add eggs and whisk in.

  3. Add all of your dry ingredients and mix super well until incorporated.

  4. Microwave for 90 seconds – It’s best for the cake to be slightly wet.

  5. Meanwhile, make your cream cheese glaze and mix.

  6. Top with your favorite ice cream or eat with a glaze.

Lemon Mug Cake

Servings: 1

Ingredients:

  • 1 tbsp butter, melted

  • 3 tbsp almond flour, packed

  • ½ tsp baking powder

  • 1 tbsp sweetener 

  • 1 egg white

  • 1 tsp lemon juice

  • 1/8-1/4 tsp lemon zest

Lemon Glaze:

  • 1 tbsp cream cheese, softened

  • 1 tbsp powdered sweetener (you can use granular too)

  • 1 tbsp almond milk or heavy cream

  • 1 tsp lemon juice

  • 1/8 tsp lemon zest 

Directions:

  1. Add your butter into a mug and melt in the microwave for 20 seconds.

  2. Add eggs and whisk in.

  3. Add the rest of your cake ingredients and mix super well until incorporated.

  4. Microwave for 90 seconds – It’s best for the cake to be slightly wet.

  5. Meanwhile, make your lemon glaze and mix.

  6. Top with your favorite ice cream or eat with a glaze.
