  • Combine warm water, yeast, and 1 tablespoon sugar in a small bowl. Allow to sit for 5 minutes or until foamy.

  • Mix flour and salt, then stir in yeast mixture. Knead for 8-10 minutes or until smooth.

  • Place in a greased bowl and cover loosely with a kitchen towel. Allow to the dough to rest in a warm place for an hour, or until doubled in size.

  • Dump the dough onto a lightly floured surface. Divide into 8 equal pieces and shape into balls. Use your thumbs to poke a hole in the center of the dough to form the bagel.

  • Meanwhile, bring a large pot of water to a boil. Once boiling, add the remaining 2 tablespoons of sugar. Preheat the oven to 400 degrees.

  • One at a time, carefully add the bagels to the boiling water and cook for 2 minutes, flipping halfway through. Place on a baking sheet lined with parchment paper.

  • Mix together the cinnamon and brown sugar in a small bowl. In a separate bowl, whisk the egg with 1 tablespoon cold water to make an egg wash.

  • Brush the bagels with the egg wash, then sprinkle liberally with the cinnamon sugar.

  • Place in the oven and bake for 20-25 minutes or until golden brown.

  • Allow to cool slightly, then serve with butter, cream cheese or your favorite spread. Enjoy!

Store in an airtight container at room temperature for up to 2 days or freeze for up to 2 months.
