Notes for Success

Sweetened condensed milk is a key ingredient for this recipe so if you cannot find any in the stores
You can easily make your own!

Combine 14ounces canned full fat coconut milk with 2/3 cup granulated sugar in a heavy bottom sauce pan and bring to a boil over high heat stirring often
Once it boils reduce heat to low, and simmer for 45-60 minutes stirring occasionally and watch it closely so it doesn’t burn or boil over
By the time 45 minutes approaches it should have reduced down to close to 1 or 1¼ cup total volume and starting to get very thick
It will thicken more as it cools. Cool completely then use it in your recipes!

White chocolate is another non negotiable here!

Agar can be a tricky ingredient since a  heavy hand, even a pinch too much can make a big  difference!
Pay attention to the strength of agar you are using in comparison to the one that author of the recipe is using

Vegan Mirror Glaze Recipe

The Vegan Mirror Glaze Recipe that has taken the world by storm but has actually been around for decades! Here is my vegan version with just four ingredients! Learn how easy it is to make a Vegan Mirror Glaze Recipe just like the pros!

Prep Time 15 minutes

Cook Time 5 minutes

Total Time 20 minutes

Ingredients  

  • Vegan White Chocolate 8 ounces (220g)
  • Vegan Sweetened Condensed Milk ½ cup (140g)
  • Granulated Sugar 1 cup (200g)
  • Corn Syrup ¾ cup (245g)
  • Cold Water 7 tablespoons (100ml)
  • HOT Water ½ cup (120ml)
  • Powdered Agar 4 teaspoons (16g)

Instructions 

  • Bloom agar in the HOT water (120ml), let stand 5 minutes

  • Combine the corn syrup, the other measure of COLD water (100ml) & the sugar in a heavy bottom sauce pot, get it warmed to at least 150°F then add the bloomed agar & bring to a boil.

  • Allow it to boil rapidly for 1 minute, then remove from the heat & add the condensed milk, whisk smooth

  • Pour the entire hot mixture over the chocolate & whisk smooth

  • Pour the mirror glaze through a strainer into a clean container & then color as you like.

  • Pour over cakes & pastries once it has cooled to 80 or 90°F

Notes

Storage & Handling This recipe will make approximately 3 cups of mirror glaze.
You will always need more than what is actually being adhered to your cakes since the excess must drip down & off the cakes.
Reuse the excess by scraping it up & storing only the clean portions in a clean container for up to 1 week in the refrigerator
