- Mozzarella Cheese. Use fresh mozzarella for this recipe, always. Never use the dried pizza type cheese. You can take this recipe to the next level by using Burrata Cheese.
- Tomatoes: Heirloom, cherry, or Roma tomatoes work best. Make sure they’re seasonal and sweet. We love sweet cherry tomatoes.
- Basil. Use fresh basil leaves for the freshest taste of the herb. You can likewise use Basil Pesto for a richer flavor of basil.
- Garlic. We use fresh garlic cloves roasted with the tomatoes for a sweeter richer garlic note. This is optional but highly recommended.
- Herbs. Additionally and optionally we love using sprigs of fresh thyme.
- Extra virgin olive oil. KEY to a great tasting meal is great tasting olive oil. We use the Moroccan brand Mina always.
- Balsamic glaze or reduction. This rounds off the sweetness of the caprese toast recipe, so highly recommended!

Prepare the Tomato Mixture
- We love roasting the tomatoes and garlic in the oven. This creates a richer and deeper flavor of the Caprese toast like you won’t even imagine!
- You’ll need a baking dish or baking sheet. Add to it the tomatoes, whole garlic cloves, lots of olive oil, thyme and season.
- Bake the tomato mixture until it has blistered and the garlic cloves have turned soft and golden. This takes 15 minutes.
- You can optionally broil the mixture for a charred taste.
- Once out of the oven, add in your fresh mozzarella cheese in slices. Or add in Burrata cheese for a Burrata Caprese.
Spread over Toast
- Toast the bread. Use a toaster, grill pan, or oven until golden and crisp. This helps the bread absorb the sweet and juicy tomato mixture.
- Assemble the toast by using a spoon and spread the sweet tomato, olive oil and cheese over the bread.
- Tear up some fresh basil leaves and add between the cheese and tomatoes.
