Method
- In a large mixing bowl, use your hands to crumble the muffins into small pieces.
- Add in the cream cheese and combine until a dough forms.
- Separate the dough into 6 evenly sized balls.
- Place the balls on a baking sheet lined with parchment paper.
- In a microwave safe bowl, melt the white chocolate and coconut oil together until smooth.
- Dip each ball into the white chocolate, let the excess drip off before returning to the baking sheet.
- Repeat until you have covered all the pumpkin balls.
- Chill until white chocolate has hardened. Sprinkle with cinnamon and serve.
