Spiralize or cut the zucchini into very thin strips.

In skillet over medium heat, saute the onion and fresh garlic.
Add zucchini noodles and tomatoes and cook until the zucchini is tender.

Serving Suggestions

This dish can be served either warm or cold and makes a great entree, side dish or cold salad. It’s a fantastic healthy snack as well.

Variations

  • Add dry or fresh basil with the other seasonings or as a topping.
  • Add parmesan cheese or vegan parmesan substitute.

Recipe Tips

Make sure to eat this on the same day that it’s made, however, because otherwise the zucchini noodles will get soggy.

Adding the cherry tomatoes later than the zucchini adds a punch of freshness to the dish.

Dried parley can also be used. Simply reduce the amount to about 2 1/2 tablespoons.

Similarly, dried onion and garlic can also be substituted in a pinch.

  • 4 large zucchini
  • 1 tablespoon olive oil
  • 1 onion (finely chopped)
  • 4 garlic cloves (finely chopped)

  • ½ cup fresh parsley (finely chopped)

  • Sprinkle feta cheese and parsley on top. Toss to combine.

  • Season with salt and pepper to taste.
