Watermelon Berry Salad with Honey Lime Dressing:

This beautiful summer salad is refreshing and delicious! It’s made with crisp, cold watermelon, fresh raspberries, strawberries, blueberries and  blackberries, drizzled with a very simple to make honey lime dressing with mint. It’s a beautiful combination of light summer flavors. I can’t get enough of it honestly.

The Dressing: 

Simply squeeze fresh lime juice into a small jar, add honey and chopped mint, and give it a shake. That’s it.

The Recipe: Watermelon Berry Salad with Honey Lime Dressing

What you need: a hand held juicer and a good knife.

The Dressing:

  • 1/4
    cup
    freshly squeezed lime juice
  • 1/4
    cup
    good quality honey
  • 3
    Tablespoons
    mint leaves, chopped (more for garnish if desried)

The Salad:

  • 6
    cups
    cold watermelon cut into 1 1/2″ chunks
  • 1
    cup
    blackberries
  • 1
    cup
    blueberries
  • 2
    cups
    strawberries, halved

The Dressing:

  1. Place all ingredients in a bowl or jar with lid and whisk or shake until well combined

The Salad:

  1. Place all fruit on a platter, drizzle with dressing right before serving
