Ingredients
- 2 small sweet potatoes, sliced into fries
- ¼ tsp olive oil
- 2 skinless chicken breasts, finely chopped
- 4 tbsp water
- 1 egg, lightly beaten
- 4 crackers, crushed
Method
- Preheat oven to 200°C/400°F/Gas 6.
- Put the sliced sweet potato on a baking tray, drizzle over the olive oil, season lightly and bake in the oven for 40 minutes.
- Meanwhile, combine the egg and water in a bowl.
- Put the crushed crackers in a shallow dish.
- Take a spoonful of chopped chicken and gently dip into the egg mix then roll in the crackers until lightly coated and place on a lined baking tray.
- Bake for the last 15 minutes along with the sweet potato chips until cooked through and golden brown.
