Can I Make It Dairy Free?
Yes you can. If you need dairy free banana bread simply swap the butter with coconut oil. Use 4 and a half tablespoons of coconut oil in place of the butter. The bread still turns out moist and full of flavor.

Gluten free baking can feel tricky at first but it gets easier once you know what works. Using the right flour blend matters most. I always recommend to let the batter rest a few minutes before baking it, if you have time. Use very ripe bananas too. They help keep the bread soft and naturally sweet. I also like to bake gluten free bread at a lower heat so it cooks all the way through without drying out.
What is the Best Gluten Free Flour
I am not a fan of most store bought gluten free flour blends. They often taste grainy or leave a strange aftertaste. They also are not soaked or sprouted which can take important minerals from your body and make digestion harder.
So instead I use single flours like finely ground almond flour, coconut flour, tapioca flour or arrowroot. I buy them from Thrive Market or Amazon and keep them in glass jars in my pantry. Having these on hand makes gluten free baking easy and much healthier.

How to Store and Freeze Banana Bread
This gluten free banana bread stores well which is one reason we love it. Keep it in an airtight container on the counter for two or three days. You can also freeze it for up to three months. I like to slice it before freezing so I can pull out just one piece at a time when I need a quick breakfast or snack.

Gluten-Free Banana Bread Recipe

- Yield: Makes 1 loaf
- 4 medium overripe bananas, mashed – it will be about 2 cups when mashed
- 4 large eggs, room temperature
- 5 tablespoons unsalted butter, melted and cooled for at least 10 minutes (substitute with 4 1/2 tablespoons of coconut oil for dairy free)
- 1 tablespoon vanilla extract
- 1/4 cup organic cane sugar
- 1 3/4 cup finely ground blanched almond flour
- 1/2 cup tapioca flour
- 1 teaspoon baking soda
- 1/2 teaspoon taking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon Celtic sea salt
Instructions
Preheat the oven to 350 and adjust the rack to the middle position. Butter a medium-size loaf pan.
In a medium bowl, whisk together the bananas, eggs, butter, vanilla and cane sugar. In a second bowl, whisk together the almond flour, tapioca, baking soda, baking powder, cinnamon and sea salt.
Pour the wet ingredients into the dry ingredients and gently stir until combined. Pour into the buttered loaf pan and bake for 45-50 minutes
