A new and whimsical spin on the traditional Assorted Vegan Box of Chocolates!
Vegan Mini chocolate cupcakes all dressed up to look like a box of truffles!
For this recipe I offer you my amazing one bowl chocolate cake recipe
No weird ingredients or egg replacers that you probably don’t have
Just a one bowl mix and no mixers required!
And PS- it works great with a gluten free blend!
Choose my bakery fudge icing or go super low sugar with a sophisticated ganache instead!
With a few drizzles of white and dark vegan chocolate for that authentic Box of Chocolates look!
The whole idea really comes together when you have the heart shaped box to put your mini cuppies into!
I am using a real box that my mom had left over from her chocolates
But you can also use what is considered a 9″ Heart Shaped Pan with a clear lid.

Notes for Success:
Make this chocolate cupcake recipe gluten free by substituting a 1:1 gluten free baking flour with no other changes.

Whenever I make ganache for piping, I mix it the day I am going to use it
Then let it set at room temperature to pipable consistency rather than refrigerating it.
This allows it to stay the same smoothness through for a silky shiny icing

Vegan Box of Chocolates
Mini muffins disguised as truffles for a really unique & delicious Valentine’s Day gift!
Instructions

Prepare your chocolate cake recipe as per the instructions but bake the batter into a mini muffin tin with paper liners

The mini cupcakes usually take about 12 minutes at 350°F

Prepare the vegan ganache and let it stand at room temperature until it thickens to the point of being able to pipe through a pastry bag as shown in the video tutorial.
Notes
Storage Valentine’s Day Box of Assorted Vegan Chocolates can be stored at room temperature for up to 4 days. You can store them in the refrigerator if your area is extremely hot, but it is not because the cupcakes will go bad if left out, in fact the cupcakes are best served at room temperature
