Chickpea Artichoke Casserole (Vegan + Gluten-Free)
This Chickpea Artichoke Casserole (Bliss in a Dish) is an oldie – but SUCH a goodie.
And I’ve made it even better.
Chickpeas. Artichokes. Potatoes. Tomatoes. Kalamata olives. Garlic. Herbs. A little balsamic.
All of these ingredients and seasonings come together into a bit of bliss in a dish.

Original Chickpea Artichoke Bliss in a Dish
This original recipe comes from Let Them Eat Vegan. Some of you may remember that my publisher began printing this book in black and white – yes, the color photos.
So a few years ago I got busy revising many favorites in this book to make them oil-free, and also easier.

Today, I’m sharing the revised Chickpea and Artichoke Bliss in a Dish recipe. Initially, removing the oil made it quite dry (as it will). But I got creative so you can enjoy all the bliss without the oil!

Why You’ll Love This Chickpea Artichoke Dish
It’s hearty without feeling heavy, full of Mediterranean flavors, and a complete meal all on its own.
Plus: minimal prep, one baking dish, fabulous leftovers.
Dinner. Done.
Don’t Have Artichokes?
No problem.
Try chopped canned hearts of palm instead. Or simply use another vegetable that works with these Mediterranean flavors.
Chopped zucchini would be lovely, as would some cauliflower (steam it first). Or, just add more potatoes and beans.
Bliss is flexible. 😉

About Those Raisins…
And yes, the original recipe had raisins. They’re now optional – but if you like raisins even a little, trust me on this one. That little hit of sweetness against the salty olives and tangy balsamic is something special.
If you really dislike them, leave them out.
But if you like raisins even a little? Trust.
They bring these little pops of sweetness that play beautifully against the briny olives, savory herbs and balsamic.

Make It a Meal
Really, it already is.
You’ve got chickpeas, potatoes and plenty of veg all cozied up in one dish. But you could also serve it with some crusty bread, a simple green salad, or even spoon it over quinoa.
And don’t forget that balsamic drizzle.

Chickpea and Artichoke Bliss in a Dish
All of these ingredients and seasonings comes together into a bit of “bliss in a
dish”!
Ingredients
- 2 tbsp white or red wine can substitute orange juice or water
- 1/4 cup tomato paste
- 1/3 cup water
- 2 tbsp brine from jar of olives
- 1 tbsp balsamic vinegar
- 1 tsp pure maple syrup
- 3/4 – 1 tsp sea salt
- 1 tsp dried oregano or 1 tbsp chopped fresh
- 1 tsp dried basil or 1/4 cup fresh leaves
- 1/2 tsp dried rosemary or 1 tsp chopped fresh
- Freshly ground black pepper to taste
- 4 cups precooked and cooled about 1 lb red or Yukon gold potatoes, cut in small cubes (about 1” thick)
- 1 1/2 cups chopped tomatoes
- 1 cup red bell pepper chopped
- 2 14 oz cans chickpeas rinsed and drained
- 2-3 cups frozen or canned artichokes drain and rinse if using canned
- 2 medium-large cloves garlic minced or grated
- 2/3 cup sliced kalamata olives
- 1/4 cup shopped sun-dried tomatoes
- 3 -4 tbsp optional: raisins see note
- Optional: balsamic reduction for serving; chopped fresh basil
Instructions

Preheat the oven to 425°F. Add all ingredients to a large baking dish (starting with 3/4 tsp salt) and toss through to combine.

Cover the dish with foil (or cover for dish), and bake for 30 minutes (stirring about halfway through the baking process).

Remove foil, bake for another 5 minutes or more(to brown or crisp as desired), then remove from the oven.

Taste, and season with more olive brine, pepper, or salt as desired. Serve, with a drizzle of a balsamic reduction or fresh basil.

Serves 5 or more.
Notes
Raisins Note: Raisins were in the original version of this recipe. If you really dislike them, omit. However, if you like them even a little, trust that they add something special to this dish!
