Life lately on the farm!

^^ Cow sighting walking to the playground!
The farm that touches my neighborhood has horses, cows, and donkeys. One of the donkeys got out the other week and was walking the children to school! I didn’t witness it, but I saw photos, and it was quite comical!
Also spotted in the neighborhood (but NOT photographed) was a giant black snake that I almost stepped on during a walk!! I’m ok with farm animals, but I would like snakes to please stay in the bushes and brush. Ever since, I’ve thought every stick on the path was a snake!

We’ve been enjoying lovely weather after a weekend of rain last week. I am already sad that winter is coming though, because it’s just so fun to be outside so much of the time!

This kit was great and not as messy as some of the other dinosaur dig kits. B loved it!

He has also been having his Spider-Man moment. Lots of drawings, books, and now a costume!

Mazen has been into costumes of the mature nature – fashion and jewelry and shoes! He has a great look, jorts and all.

Soccer season is well underway for Birch and me. Love playing this time of year!

Also, Cheerios knew it was our birthday month before I did! Birch and I are counting down the days : )

This time of year also hosts the annual Brewer’s Ball, a fundraiser for cystic fibrosis. I believe this was the 11th one, and it’s always a fun time.

Brunch at Noble
Noble Argentinian Steakhouse invited me to try their new brunch, which is now on the weekends from 10 a.m. to 2:15 p.m.

They have some impressive dishes, from two different kinds of French toast to the famous Argentinian steak and eggs! If you are local, give it a go!!

Kath Eats Real Food
On to the meal recaps!
Breakfasts
Smoothie season starts to wane, but on warm mornings I still crave one!

And oatmeal season is here!! I’ve had the same blueberry cottage cheese bowl on repeat. But I just bought a can of pumpkin, so that’s coming next!

Lunches
I got a HelloFresh box after they sent me a great promo. I got a few of their fun add-ons for lunches, like these two different toasts. Ricotta with apples and hot honey came first…

And Everything Avocado Toast came second. Loved these for a change-up from my usual lunch salad. FYI, my referral link has a free box for you.

Leftover taco lunch with guac, chicken, peppers, and Greek yogurt “crema.”

Salmon grain bowl with peppers, feta, and greens. (I used my Wonder Oven to air-fry the salmon.)

More of the same leftovers!

Dinners
Love a good sheet pan meal! I learned the panko technique from Blue Apron and use it all the time to bake chicken. I just put some kind of sauce under it and love the combo of sauce and crunch. Veggies on the side (roasted eggplant is my veggie of the month).

More sheet pan meals with salmon, potatoes, broccoli, and a couscous mix.

This was another HelloFresh meal with coconut-crusted chicken strips, jasmine rice, pickled cucumbers, and a sweet chili sauce.

The boys also loved their flatbread pizza! This was another easy add-on to my box for something like $5.99.

I hope you have a lovely weekend! I’m heading to Bald Head Island with friends!
