I love my air fryer. It’s the best. And it happens to be pretty enough to leave on the counter (see what I mean here). But beauty isn’t the only reason I love it, it’s the convenience and results I get when I use it. These Air Fryer Potatoes with Bacon (Whole30)are a perfect example. Quick, easy, crispy and delicious and in half the time it takes to roast them in a conventional oven!

Air Fryer Potatoes with Bacon (Whole30):
These Air Fryer Potatoes with Bacon (Whole30) make a great side dish. I use new potatoes, thick cut bacon, olive oil, sea salt, and shallots for the perfect combination of flavors. The air fryer creates really crispy potatoes and bacon, and cooks them at the same time, saving you time and clean up! After cooking simply garnish with fresh chives and serve!
Serve for Breakfast or as a Side Dish!
These potatoes are perfect served with eggs for breakfast, or as a side dish with dinner.

The Recipe: Air Fryer Potatoes with Bacon (Whole30)
What you need: an air fryer and a fabulous knife!

A quick and easy potato side dish recipe made in the air fryer

new potatoes, cut in half (or quartered if your potatoes are a little bigger) -

tablespoon
olive oil - sea salt and freshly ground pepper

pieces thick cut bacon -
2
small shallots, peeled and quartered -
2
tablespoon
chives, sliced

Cut potatoes in half, place in a bowl, toss with olive oil, sea salt and pepper. Add to air fryer and top with slices of bacon.

Air fry on 400 for 8-12 minutes, until bacon is done to your liking. Remove bacon and place on paper towel. Toss potatoes, and continue to cook potatoes for 8 more minutes. Add shallots, and cook 8 more minutes. Chop bacon and chives, set aside. When potatoes and shallots are done to your liking, pour onto a platter. Sprinkle with bacon and garnish with chives.
