I am all about the greens, healthy fats, antioxidants, and the protein…this Chicken and Berry Salad has it all!

The Chicken and Berry Salad:
This salad is made with fresh baby greens (from the farmers market), an assortment of sweet berries, red onion, feta cheese, walnuts and a perfectly cooked chicken breast, all drizzled with a heart healthy lemon vinaigrette!
The Chicken:
I am going to offer you three options for the chicken: you can grill it, make it on the cooktop, or if you are really pressed for time you can certainly use rotisserie chicken. It will be fabulous no matter which you choose!
The Lemon Vinaigrette:
The dressing for this salad comes together in about 90 seconds. Simply whisk together good quality olive oil, freshly squeezed lemon juice and honey for a slightly sweet, tangy, heart and brain boosting salad dressing!

What you need: as always you need a good knife. I use a hand held juicer to juice citrus.

The Salad:
Honey Lemon Dressing:

good quality extra virgin olive oil -
3
Tablespoons
freshly squeezed lemon juice -

raw honey -
pinch
sea salt - few turns fresh black pepper
Prepare dressing:

Whisk together olive oil, lemon juice, honey, sea salt, and pepper. Set aside.

When chicken is finished allow to rest for five minutes, then slice.

Place all salad ingredients in a large bowl or on a platter. Dress salad and toss. Plate and set half a chicken breast atop salad on each plate. If you have extra dressing (you should) drizzle over chicken. Sprinkle with additional sea salt and pepper if need.
