Line a half sheet pan with parchment paper.

Stir together the almond flour, sweetener, cinnamon, and salt in a medium sized mixing bowl until combined. Mix in the butter and vanilla extract until a thick batter is formed.

Scoop out the mixture into 1 tablespoon size rounds and place on the lined cookie sheet, evenly spaced. With your hands, roll into 24 balls. Place into the freezer for 20 minutes.

Add the chocolate chips and the coconut oil to a medium size heat proof bowl. Fill a saucepan halfway with water and bring to a simmer. Set the bowl of chocolate over the simmering water and cook, stirring frequently, until the chocolate is completely melted. Remove from the heat.

Dip each ball into the chocolate mixture and coat completely. Set back on the lined sheet tray. Continue with the remaining balls. Freeze for an additional 10 minutes. Keep refrigerated in an airtight container until ready to eat.
