Easy Blueberry Compote:
Compote or compôte (French for stewed fruit) is a dessert originating in medieval Europe, made of whole or pieces of fruit in sugar syrup. There are only three ingredients in this recipe, blueberries, maple syrup (or granulated sugar) and lemon juice, all simmered together in a sauce pan until a thick jammy sauce is achieved. When cooled it will have a jam like consistancy.
What to do With Easy Blueberry Compote:
Pour over vanilla ice cream, pancakes, waffles, or on top of Vanilla Scones with Lemon Glaze.
What you need: a small sauce pan and a hand held juicer.

Place a small sauce pan on medium heat. Add 1 cup blueberries, maple syrup, water, and lemon juice to pan. Bring to a simmer. Lower heat if needed and simmer for 10 minutes stirring frequently.

Stir in another cup of blueberries and simmer for 8 minutes. Turn off heat. Sauce will thicken as it cools. Pour over ice cream or scones or pancakes.
