I have to give credit to TikTok creator Lex Nicoleta for creating this easy and incredible Boursin Bruschetta Dip recipe.

While we didn’t seem to have a song of the summer this year for whatever reason, Lex’s Boursin Bruschetta Dip took social media by storm on account of how simple it is to whip up, and how fresh and delicious it is.

Forget crackers and crostini, this creamy, flavor-packed bruschetta dip is so good you’ll want to eat it with a spoon! (Ask me how I know…)

Why You’ll Love This Easy Dip

  1. Quick: only have 20 minutes to whip up an appetizer for book club, or to take to a potluck? Perfect! That’s all you need for this no-cook/no-bake appetizer.
  2. Fresh: the tomato-basil bruschetta mixture is literally bursting with fresh, summer flavor. Typically only 3/4 of it makes it to the final dish…
  3. Easy: all you need to do is spread softened boursin cheese into a shallow bowl or pie pan, then top with the bruschetta. Hello, easy!

Creamy Boursin + Fresh Bruschetta Dip

If you’ve ever had Boursin cheese then you know it’s an automatic YES when you see it in a recipe title.

Boursin is a soft and creamy cheese that’s infused with flavor from herbs, spices, and aromatics including garlic and shallot. The texture is somewhere between cream cheese and chevre, and there are more than a handful of flavors to choose from.

I especially love their classic Garlic and Fine Herbs and Shallot and Chive flavors for this summer dip recipe that’s gluten-free, vegetarian, and easily made dairy-free, too.

Main Ingredients Needed

  • Boursin cheese: is the creamy base layer of the dip. Feel free to use the flavor that speaks to you most, and/or dairy-free Boursin if you need it.

For the Homemade Bruschetta Mixture:

  • Tomatoes: I recommend vine-ripened or Roma tomatoes for the homemade bruschetta that’s spooned on top of the Boursin cheese layer, but use whatever looks best and is most fresh.
  • Basil: is chopped up and mixed into the bruschetta mixture, as well as placed on top of the dip as garnish.
  • Garlic: a single, raw clove provides intense garlic flavor to the bruschetta.
  • Evoo + Balsamic vinegar: create a light “sauce” for the bruschetta.

How to Serve Boursin Bruschetta Dip

After spooning the bruschetta on top of the Boursin cheese, drizzle balsamic reduction over the top then set the dip out with a spreading knife and crackers or crostini.

  • Crackers: I like Breton crackers which come in gluten free and regular varieties, though any buttery or “entertainment” type crackers are great.
  • Crostini: are what you see in these photos. I like how crisp and sturdy they are, plus they’re very simple to make. I’ve provided a recipe in the notes section of the recipe card below.

I also provided make-ahead instructions for this dip in the notes section of the recipe card, though it’s definitely best served immediately after assembling.

How to Make Easy Boursin Bruschetta Dip

Step 1: Soften the Boursin cheese.

Start by placing two packages of Boursin cheese in the flavor of your choice on the countertop to soften for 15-20 minutes.

Step 2: Make homemade bruschetta.

While the cheese is softening, make the homemade bruschetta that’s spooned on top of the Boursin cheese layer. My homemade bruschetta is seeeriously incredible, and so easy too.

To a mixing bowl add chopped, de-seeded tomatoes, chopped fresh basil, pressed or minced garlic, a splash each of extra virgin olive oil and balsamic vinegar, plus salt and pepper. Stir the bruschetta to combine then let it sit for 5 minutes to give the salt time to draw the excess moisture out of the tomatoes.

You’ll want to leave the juices in the bottom of the mixing bowl so the dip doesn’t become watery.

Use the juices to dress a small lettuce or cucumber salad or, do what I do and spoon drink it. Seriously. It is SO good!

Step 3: Spread the Boursin into a dish.

Unwrap the softened Boursin cheese then place it inside an 8-9″ shallow dish or pie plate and spread it into an even layer using the back of a spoon.

Step 4: Top the cheese with bruschetta.

The last step is to top the softened Boursin cheese layer with the bruschetta. I like to leave a strip of uncovered cheese around the outside of the dish so people can see that there’s something underneath the bruschetta.

Top with a drizzle of balsamic reduction and a few fresh basil leaves, serve with crackers or crostini, and you’re set!

No matter how or when you serve it, I hope you love every last drop of this easy and summery Boursin Bruschetta Dip – enjoy!

  • 2, 5.3 oz packages Boursin, see notes
  • 1-1/2 cups chopped de-seeded tomatoes, vine-ripened or Roma tomatoes recommended
  • 1/4 cup packed fresh basil leaves, chopped, plus more for garnish
  • 1 Tablespoon extra virgin olive oil
  • 1 Tablespoon balsamic vinegar
  • 1 clove garlic, pressed or very finely minced
  • salt and pepper
  • balsamic reduction, Alessi brand recommended
  • crackers or crostini, see notes for recipe
  • Let the Boursin packages sit on the counter for 15-20 minutes to soften slightly while you prepare the rest of the dish.

  • To a small mixing bowl add the chopped tomatoes, basil, extra virgin olive oil, balsamic vinegar, garlic, salt, and pepper then stir to combine. Let the mixture sit for 5 minutes which will give the salt time to draw the juices out of the tomatoes.

  • Add the slightly softened Boursin cheese to an 8-9″ shallow serving dish or pie pan then use the back of a spoon to spread it into an even layer.

  • Spoon the bruschetta mixture over the top, leaving all the juices in the bottom of the mixing bowl (drizzle the juices over lettuce or sliced cucumbers as a salad dressing).

  • Drizzle the top of the dip with balsamic reduction then garnish with extra fresh basil leaves. Serve immediately with crackers or crostini and a spreading knife.

  • You can use any flavor of Boursin you like, including the dairy free version of Boursin.
  • To make ahead: spread the Boursin into the bottom of a serving dish and prepare the bruschetta up to 24 hours ahead of time. Cover then store separately in the refrigerator. Spoon the bruschetta mixture over the Boursin just prior to serving.
  • To make crostini: slice a gluten free baguette (or regular baguette if you don’t need to eat GF) into 1/4″ slices then arrange on a silpat or parchment paper-lined half sheet pan. Brush both sides with extra virgin olive oil then season lightly with salt and pepper. Bake at 350 degrees for 8-12 minutes, or until the crostini are golden brown, rotating the baking pan and flipping the crostini over halfway through.
  • Estimated nutritional information does not include crackers or crostini.
