Easy Swedish Kavring (Rye Bread) – No Yeast, No Knead, Whole Grain & Vegan

This Easy Swedish Kavring (a traditional dark rye bread) is a dense, moist, whole grain loaf that’s packed with nutrition and old-world flavor. Made with a mix of whole grain rye flour, whole wheat, nuts, and seeds, it’s naturally vegan, yeast-free, oil-free, and requires no kneading—just mix, pour, and bake. Honestly, this recipe takes me about 10 minutes to mix up and pop in the oven, and I’m rewarded with a fabulous, hearty loaf an hour later. It holds well in the fridge, where the moist, rich, nutty texture keeps on giving. It’s delicious served with sandwich toppings or fillings, or as an addition to soups, stews, or salads. Plus, it’s packed with whole grain goodness, fiber, protein, healthy fats, vitamins, and minerals.

What is Kavring?

Kavring is a beloved staple in Swedish cuisine, traditionally enjoyed during holidays and family gatherings, often served with toppings or spreads. Since my husband is Swedish and I’ve spent 30 years getting to know this fabulous rich cuisine, I have enjoyed it on multiple occasions. Historically, rye has been a staple crop grown in Sweden, and Swedish rye breads like kavring were developed to last through long winters—dense, nourishing, and made from ingredients that were available year-round. This modern vegan take is lightly sweetened with molasses, no oils and optional salt, and is rich in fiber and whole grain goodness. This recipe is very versatile! I’ve made dozens of variations with this basic recipe. You can replace some of the whole wheat flour for oat flour, almond flour, chickpea flour, or peanut flour. You can also swap out the almonds for chopped walnuts, hazelnuts, pecans, or peanuts; and the flax seeds for hemp or chia. Try adding additional seasonings, such as anise seeds, poppy seeds, fennel seeds, or cardamom to experiment with the flavors.

Description

Discover how to make traditional Swedish kavring—a dense, moist rye bread made with whole grains, nuts, and seeds. No yeast, no kneading, no oil. Just mix, pour, and bake! Vegan, healthy, and delicious.



  1. Preheat oven to 350 F.
  2. Place soymilk and lemon juice in a large mixing bowl, stir and allow to sit for 5 minutes. Stir in molasses and mix with a wooden spoon until smooth.
  3. Add rye flour, 2 cups wheat flour, almonds, caraway seeds, sunflower seeds, pumpkin seeds, sesame seeds, salt (optional), and baking soda. Mix with a wooden spoon until smooth. Do not overmix, as it will toughen the batter.
  4. Spray a 9 x 5-inch loaf pan with nonstick cooking spray and add one tablespoon of the whole wheat flour. Shake the pan to distribute the flour all over the surface.
  5. Pour the batter into the loaf pan and smooth surface with the spoon. It makes a very high loaf of bread, so it will completely fill the loaf pan.
  6. Place in the oven and bake for 1 hour.
  7. Remove from oven, place pan on a cooling rack for 10 minutes. Remove from the pan by loosening the sides with a knife. Allow to cool 30 minutes before slicing.
  8. Makes 16 thin slices. You can slice it into 12 thicker slices, according to your preference.

Notes
