As we head into fall (my favorite season) I will be posting plenty of delicious, nourishing, savory, seasonal dishes…and chances are, at least a few will include butternut squash, my favorite fall/winter vegetable. But until then I have loads of recipes using this versatile vegetable, here are Eight Butternut Squash Recipes I think you will love!

So Let’s talk About Butternut Squash:
Butternut squash is loaded with vitamin A, tastes very sweet, lasts forever sitting on your counter, is completely versatile: you can bake it, fry it, roast it, and puree it. It literally does everything! That said, it can be tricky to work with unless you know have the proper tools. So here are some tips that will make working with BNS a breeze.
Buy Precut Butternut or Cut Your Own? Let’s Chat:
You can buy pre-cut butternut squash in many grocery stores these days. My advice on this: make sure it’s fresh. Feel it through the bag to make sure it’s not mushy or slimy and check the date it was packaged. If it’s firm and fresh and brightly colored, go for it! But if it’s anything less than that, I recommend peeling and cutting it yourself. So working with butternut squash can be difficult, unless you have the right tools. You need a good sharp knife (my favorite) and a “Y” peeler (affiliate links). With these two tools peeling and cutting a butternut squash is a piece of cake!
