As we close out the summer of 2025 I wanted to post one more seasonal recipe, Fresh Peach Salsa. So fresh, so delicious, so summer!

Let’s Chat About Stone Fruit:
Peaches are a stone fruit. ‘Stone fruits’ have a thick flesh that surrounds a large single pit…think cherries, plums, nectarines, peaches, apricots etc. Stone fruits are known to be high in cancer fighting properties such as phenols, vitamin B17 and vitamin C. So take advantage of their healthful properties while they are in season and eat them as is, or add them to oatmeal, cereal and of course, salads!
Using “Free-Stone” Peaches or “Cling” Peaches?
What is the difference between “cling” peaches and “free stone” peaches? Cling peaches literally cling to the pit, making them perfect for eating like an apple or for making slices for salads, but not as convenient when you want to cut the peach and have a perfect half (for grilling as an example). Cling peaches are available from May-August. Freestone peaches on the other hand separate easily and the pit falls right out, making them perfect for any recipe calling for a perfect half peach. Free stone peaches are usually available from mid-June to mid-August. Depending on the recipe, it may be more convenient to use one or the other.
How to Make Fresh Peach Salsa:
Salsa is really easy to make. In this case we simple dice peaches, red bell pepper, red onion, serrano chili, cilantro and then drizzle with lime and sprinkle with sea salt. Yum!

What to Use Fresh Peach Salsa With:
You can use this salsa for chips, or to top Hot Honey Chicken, tacos or Chicken Wraps. This fresh Peach Salsa will add flavor, color and healthful nutrients to whatever you choose to serve!

What you need: a good knife. I like this 8″ Wusthof Ikon Chef’s knife

A fresh, delicious, healthy summer salsa

fresh peaches, peeled and diced -

red bell pepper, diced small -

red onion, chopped small - juice of half a lime

finely minced serrano chili (see link to instructions above in blog post) -

chopped cilantro - generous pinch of sea salt

Place all ingredients in a small bowl and toss. Serve right away or refriderate for up to two days
