Key Ingredients
Low-fat (2% milk fat) cottage cheese: The star ingredient that makes this drink high in protein and ultra creamy when blended. We use a low-fat cottage cheese to slightly increase the protein percentage, but you can use full-fat if you like.
Lemon juice: Freshly squeezed is best, but bottled lemon juice works in a pinch.
Allulose: We use sugar-free allulose since it dissolves well and has no weird aftertaste. But you can sub with monk fruit, erythritol, or any preferred sugar-free sweetener.
Ice: Chills and thickens the drink, giving it that frozen whipped texture. Adjust the number of cubes for a thicker or thinner consistency.
Prep Steps
Add ingredients to a blender: Combine cottage cheese, lemon juice and allulose in blender and blend until smooth. Add ice cubes and blend again until smooth and creamy.
Taste and adjust: Give it a taste and add more sweetener as desired, then blend again to mix.
Serve immediately: Pour into glasses and enjoy!


Variations
Berry whipped lemonade: Add a few fresh or frozen strawberries or raspberries before blending for a fruity twist. Note that you may need to add a little more sweetener to balance the tartness.
