Kiki Nelson’s Candy Bar Bites


If you’ve never tried the magical combination of dates, chocolate, and peanut butter, you’re in for a treat! Dreamed up by Plantiful Kiki blogger Kiki Nelson, these quick, chewy chocolate date bites deliver that classic candy-bar flavor with just three wholesome ingredients. These make great gifts and are even better chilled, as they achieve a luscious, caramel-like texture.

Yield: Makes 12 pieces
Time: 10 minutes
  • ¼ cup peanut butter powder, such as PB2
  • 12 pitted Medjool dates (6 oz.)
  • 2 tablespoons chopped vegan dark chocolate or mini chocolate chips, such as Enjoy Life

Instructions

  1. In a small bowl stir together peanut butter powder and 3 tablespoons water. Transfer peanut butter to a resealable plastic sandwich bag and use scissors to snip off one of the bottom corners.
  2. Arrange dates on a plate and pipe a drizzle of the peanut butter over them. Sprinkle with chocolate. Store in an airtight container in the refrigerator up to 1 week.
