- 8 oz. dry whole wheat orzo
- 6 tablespoons lemon juice
- 1 teaspoon freshly ground black pepper
- ¼ teaspoon sea salt
- 1 red bell pepper, finely chopped
- 1 red onion, finely chopped
- 1 cup cherry tomatoes, halved
- 1 cup pitted Kalamata olives, chopped
- ¾ cup canned chickpeas, rinsed and drained
- ½ cup chopped fresh parsley
Instructions
- Cook orzo according to package directions; drain. Transfer to a large bowl and let cool.
