May The Force Be With You • Kath Eats


Here’s what we did around Star Wars Day!

I’m always writing posts with a little bit of a delay these days! Last weekend (first weekend of May), Thomas and 11 of his friends went on an epic golf pilgrimage to the Pinehurst, North Carolina. They had an amazing time playing some of the courses in the area three days in a row.

The Homestead

Back at the homestead, the boys and I had a good time (while missing our T-daddy!) I am so spoiled that T brings me coffee in bed every morning (just like his dad does for his mom!)

But I made the best of it saving the leftover coffee and drinking it iced the next day when I had to get up extra early to get the boys to school on time!

I had a peaceful time working on the porch all morning.

Pizza + Game Night

Thursday afternoon I took Birch to kids zone during my workout class and then invited the crew back to the porch for pizza and games! It was a great way to feel less alone.

I made a big pesto kale salad to go with Fabio’s pizza. Just fresh pesto (from Wegman’s) massaged into kale (stems picked out). Everyone loved it, and it could not be more simple.

JP brought ice cream cones for everyone!

Work Sesh at Cumbre

After taking Birch to school on Friday, I walked on a beautiful morning to Cumbre to enjoy a latte! I just love the accompaniments they provide with their amazing coffees. They are opening a second location at Dairy Market soon – stay tuned locals!

Fridays After Five!

We kicked off the weekend with the start of Fridays After Five! LOVE this summer series and that it’s free and very kid friendly!

I packed up more pesto kale with leftover penne and avocados to have for a picnic. Birch had leftover pizza in a lunchbox, and Mazen walked himself down to Christian’s and got his own pizza with Apple Pay. So great to have older kids!

Birch had the best time!

Bedtime

We walked home for bedtime and ended the night with Star Wars stories. Birch can read to me now!

Saturday Puzzles

Nespresso + yogurt bowl

I worked on this puzzle all weekend (my favorite “mom is watching but not necessarily playing” activity) and it was one of my favorites ever due to the colors and patterns!

I had a sitter come so I could slip away for a birthday happy hour.

Chicken Tortilla Soup

I made this chicken tortilla soup using rotisserie chicken for dinner. It was easy and delish paired with the Primavera Avocados I had sent to me!

Sunday

Mazen had a friend sleepover, and the two neighbor boys were over Sunday morning, so we had 5 boys and me over here! It was a bit wild at times, haha. The kids had cinnamon chip, and I tried an egg cup in the microwave with mine for additional protein.

Soccer Final Game

Scenes from our final games of the season! We tied 3-3 in the last minute.

Tarlisha’s Mac & Cheese

Mazen has a student teacher named Mr. Mac who was having his last day of school, so Mazen wanted to make him homemade mac and cheese. We used Tarlisha’s recipe that my mom has made many times for us. It was very easy and incredibly creamy! Mr. Mac loved it!

Sunday Dinner

A Blue Apron classic meal to welcome Thomas home: balsamic chicken and mashed potatoes.
