Biscuits are one of life’s simplest pleasures. Pure comfort food without the kitchen machine or waiting around time of making bread. While this recipe has a Southern flair, we have some classics that you need to try.
This the ABSOLUTE Tutorial you need on How To Make Biscuits. Flakey layers of soft biscuit with some rosemary and cheese.
Our other favorite recipe are these Drop Biscuits. These are equally delicious when made sweet or savory. Think of them as spoonfuls of biscuits dropped into the baking sheet instead of rolling and cutting out biscuits diugh.
So for today’s recipe, it’s a completely different idea. Just a handful of ingredients, straightforward process and delicate soft biscuits. Thanks to using some quality mayo, these come out perfectly every single time.
Here’s why you’ll LOVE them!
Why You’ll Love These Mayonnaise Biscuits
- FLUFFY! Fluffy and tender is KEY to any biscuit recipe and these are just that!
- Tender and moist. These biscuits are super soft and keep well for days thanks to the Mayo.
- They DON’T taste like mayonnaise, in case you’re wondering 🙂
- 3-4 Ingredient only. When relying on the mayonnaise, you can skip multiple ingredients such as butter, oil or eggs.
- One BOWL recipe. You really need just one large bowl and you’re set.
- Ready in under 20 minutes. Perfect for busy mornings or last-minute dinners.
- Versatile! You can swap herbs, cheeses, spice blends and more!
- Stores really well! These will freeze so well and store so well in the fridge for the next day(s).
Ingredients You’ll Need
Here are the simple basic ingredients to make those biscuits:
- Self-rising flour. This is basically flour which includes baking powder. If you don’t have it, we included the full recipe below using all purpose flour. So it’s flour and some baking powder to make the correct amount needed.
- Mayonnaise. The HERO ingredient here. Mayonnaise contains the necessary fat to add moisture and softness to the biscuits. Use quality mayo for this recipe, we use avocado oil mayonnaise-always.
- Salt and Sugar. If using the self rising flour, you don’t need to add any salt. However if using regular flour you’ll add salt. We also love adding a pinch of sugar to the recipe.
- Milk. Any kind, including dairy-free. Whole milk however adds richness to the recipe.
How to Make Mayonnaise Biscuits
Make the Dough
- Start in a large bowl and use a whisk. Take the flour, salt, sugar and baking powder and whisk those together to blend evenly.
- If using self rising flour here, you don’t need this step. The self rising is usually premixed. We add the sugar to sweeten our biscuits lightly and to help browning in the oven.
- Measure the mayonnaise in a cup. For a pro tip, we spray the measuring cup with oil before adding in the mayo. This helps the whole amount of mayo release smoothly from the maturing cup.
- Add the mayo to flour mixture. And add in the milk. Now use a spatula to bring the dough together.
- It will look messy but it will eventually come together. Resist the urge to add in more flour until you’e mixed it well with your hands.
Roll and Shape the Bicuits
- Turn the dough onto a floured surface and pat it into a round or thick rectangle shape, about half an inch thick.
- Fold the dough into thirds. Begin by folding one side into the third.
- Now fold the other side to complete the second third and you’ll have a long dough.
- You should see the three layers as shown here.
- This folding process creates a flakey layered biscuit. So while it’s optional, we strongly recommend it!
- At that point your dough is ready to roll out into a third inch thickness or so.
- Use a cookie cutter or biscuit cutter to cut out equal circles of dough to form the biscuits.
Bake the Biscuits
- On a baking sheet lined with parchment paper, you’re going to arrange the cut out biscuits.
- Make sure there’s about an inch between each biscuit to allow for them to expand during baking.
- Brush the tops of the biscuits before baking. You can use melted butter, egg wash or even an oil spray.
- Sprinkle any topping you like on the biscuits before baking.
- You can sprinkle coarse sugar, cheddar cheese, parmesan cheese, herbs etc.
- Place the baking sheet in a preheated oven and bake the mayo biscuits until golden brown.
Serve
Serve the mayo biscuits warm or room temperature with some jam, or make them into a sandwiches. Also perfect with soups, salads and more on that below!
Mayonnaise Biscuits Recipe Tips
- Use quality mayonnaise for this recipe. You’ll be relying on it for fat, tenderness and overall taste of the biscuit recipe. It won’t necessarily taste like mayo, but the ingredients of the mayo will contribute.
- You’ll need to use real MAYO here–no salad dressings or low fat substitutes.
- It’s best to use a bowl and whisk only for this recipe.
- Don’t overmix the dough. A light hand keeps the biscuits tender.
- Folding the dough into thirds crates a flakier and layered biscuit, but it’s completely optional of course.
- If your kitchen is hot, it’s best to use cold ingredients. In general using cold ingredients helps with flakeier biscuits.
- Make sure the oven is well preheated before baking.
- Sprinkle your favorite sugars, herbs, cheeses, spices on the biscuits before baking.
- Likewise you can use add-ins. Add in some shredded cheese, chives, garlic powder, or even crumbled bacon in the dough.
- These particular biscuits are super forgiving, so feel free to experiment.
- If you don’t have self rising flour, follow our recipe below.
What do mayonnaise biscuits taste like?
They have a sweet tender taste which is like a cross between a biscuit and a muffin. The mayo flavor disappears during baking, but leaves in a creamy bread-y like taste.
Can I use Greek yogurt instead of mayo?
NO. Greek yogurt while creates soft bakes is not like mayonnaise. It lacks the amount of fat the mayonnaise has, so the texture will be drier.
Do I need to grease the Baking Sheet?
We prefer using baking sheets lined with parchment paper.
Can I freeze mayonnaise biscuits?
YES. Freeze in a ziploc bag that is airtight and reheat later. We LOVE reheating them in an air fryer or oven once they’re defrosted. Avoid the microwave when possible for reheating.
Are mayonnaise biscuits healthy?
They’re lower in saturated fat than butter-based biscuits, but still indulgent. The avocado oil mayo is definitely a BETTER option.
