I tell you exactly how I make but also give a lot of leeway for portions and ingredients so you can customize with whatever floats your boat.

Let’s Talk all Things Peaches:
Peaches are a ‘stone fruit’. Stone fruits have a large pit in the center that is surrounded by a thick flesh. Cherries, apricots, peaches, nectarines etc… are all stone fruits. Stone fruits are high in antioxidants and therefore have natural anti inflammatory properties. Unfortunately they are only in season for a short time so take advantage and get while the getting is good! To pick a ripe peach you are looking for a slight softness when pressed (like a ripe avocado) but you don’t want it too soft or it will me mushy when diced. If you can’t find a ripe peach at the store, simply set them on the counter and they will ripen in a day or two.
Peaches with Zesty Cottage Cheese:
When I say this Peaches with Zesty Cottage Cheese meal is an easy breakfast/lunch/snack, I mean it! It’s as simple as dicing peaches and topping cottage cheese with nuts (I used pistachios today) lemon zest, and honey. But you can also add dried cranberries, walnuts or almonds, chopped dates instead of honey…it’s totally customizable. Cottage cheese contains 25 grams of protein per cup, so this little bowl a protein powerhouse.
Using “Free-Stone” Peaches or “Cling” Peaches?
What is the difference between “cling” peaches and “free stone” peaches? Cling peaches literally cling to the pit, making them perfect for eating like an apple or for making slices for salads, but not as convenient when you want to cut the peach and have a perfect half (for grilling as an example). Cling peahces are available from May-August. Freestone peaches on the other hand separate easily and the pit falls right out, making them perfect for any recipe calling for a perfect half peach. Free stone peaches are usually available from mid-June to mid-August. You can use either for this recipe.
What you need: a microplane. for zesting lemon.

large, ripe peaches, diced (you can leave the peel on or off) -

cottage cheese (I use full fat) - zest of one lemon

chopped nuts, I used roasted, salted pistachios) - good quality real honey
Option: You can add whatever else you like in whatever amount you desire. You can use almonds or walnuts instead of pistachios, if honey isn’t your thing I suggest dried cranberries, or chopped dates instead.

Dice peaches and place in bowl, add cottage cheese and top with any of the ingredients listed above. Enjoy!
