Ingredients
- 2 tins red kidney beans
- 1 onion, finely chopped
- 1 tbsp olive oil
- 1 garlic clove, finely chopped
- 1 green pepper, finely chopped
- 1 medium carrot, grated
- 1 egg
- 4 crackers, crumbled into breadcrumbs
- 1 tbsp tomato puree
Method
- Pre-heat the oven to 200⁰C/400⁰F/Gas 6.
- Drain the beans and mash with a fork in a bowl.
- Sauté the onion in oil for 3 minutes. Add the garlic, green pepper and carrot and cook for 5 more minutes.
- Combine beans, vegetables, tomato puree, egg and crackers together and shape in to 8 small burgers then bake in oven for 25 minutes until golden.
TIPS AND TWEAKS
Go light and serve with a side salad and a big dollop of natural yoghurt.
