Sweet, tender roasted carrots combined with a creamy, savory cottage cheese and feta spread make one seriously delicious and simple dish! The caramelized sweetness of the carrots pairs so well with the creamy, lemony, and garlicky whipped spread. It’s a tasty mix of sweet and salty, warm and cool, soft and smooth.

These roasted carrots with whipped cottage cheese are also super nutritious. It’s a high-protein, low-carb side dish that goes great with most protein main dishes. The carrots add fiber, vitamin A, potassium, and antioxidants, while the low-fat cottage cheese and feta add more protein and calcium to the dish.

Plus, it’s so easy to make! Just toss the carrots with a little olive oil and roast until tender. While they’re in the oven, blend up the spread ingredients in a food processor until smooth and creamy. Then combine the carrots and spread together on a plate, and you’re done!

Ingredients

Low-fat crumbled feta: Feta adds a salty, tangy kick that balances the creamy dressing. We use low-fat feta to keep the salad lighter, but regular feta works just as well.

Garlic: Adds a savory kick that gives the spread pop. Freshly grated or minced garlic is best.

Lemon Zest and Juice: Brightens everything up! Don’t skip the zest though, it adds so much flavor!

Fresh Herbs (like dill, chives, or parsley): Add a burst of freshness and a little color. Dill and chives pair especially well, but use whatever you have on hand.

Recipe Preparation

Prep the carrots: Preheat your oven to 425°F. Peel the carrots and slice them in half lengthwise if they’re thick, or leave them whole if they’re thinner. Try to keep them around ¼ to ½ inch thick so they roast evenly.

Season and roast: Toss the carrots with olive oil, a few pinches of salt and pepper, and a little smoked paprika (just a pinch or two) if using. Spread them out on a baking sheet in a single layer. Roast for about 20 minutes or slightly more, flipping halfway through, until they’re tender and golden on the edges.

Make the whipped spread: While the carrots roast, add the cottage cheese, feta, olive oil, garlic, lemon zest and juice to a food processor. Blend until the mixture is smooth and fluffy. Taste and season with salt and pepper as needed.

Assemble and serve: Spread a generous layer of the whipped cheese mixture on a serving plate or individual plates. Sprinkle with herbs or squeeze of lemon juice if you’d like. Serve and enjoy!
