sweet potatoes, about 1¾ pounds, peeled and cut into 1/2″ wedges -

olive oil, divided - Sea salt and freshly ground black pepper

chili (homemade linked above, or use storebought) -

grated cheddar cheese, grated -

Prep and roast the sweet potato fries:

Heat the oven to 425ºF and place oven rack in center position

Scrub or peel the sweet potatoes. Trim the ends and cut the potatoes in half lengthwise, then cut each half lengthwise into ½-inch-wide wedges.

On a sheet pan covered with parchment paper, toss the sweet potato wedges with 2 tablespoons olive oil and season generously with salt and pepper. Spread in an even layer and roast, turning once halfway through cooking time, until tender and lightly browned, about 40-45 minutes. When the sweet potatoes are almost done roasting, heat the chili, grate cheese and slice green onions.

Take fries out of the oven and place on platter. Spoon chili over fries, sprinkle with cheese, and garnish with scallions. Serve.
