Ingredients You’ll Need
- Ground Beef. Lean ground beef or extra lean is preferable here. Similar to these Ground Beef Tacos and Ground Beef Nachos. You can also be adventurous and try ground lamb similar to those Lamb Tacos.
- Aromatics. The base of flavor which includes diced onions, bell peppers, garlic, and if you’d like to add carrots you can.
- Taco Spice Blend. You can use homemade or store bought taco seasoning. We used homemade and we combined some oregano, cumin, chilli powder, garlic powder an onions powder.
- Tomatoes. Canned crushed tomatoes or canned baby cherry tomatoes are our top picks. You can however use fresh tomatoes if. they’re in season. Alternatively for a spicier and richer taste, use the rotel fire roasted diced tomatoes.
- Corn. Or black beans or both. We used frozen organic corn kernels.
- Herbs. Lots of fresh cilantro and parsley for flavor and freshness.
- Cheese. Home grated cheese is best. Use your favorite cheddar, Monterey Jack or combo.
- Spaghetti. While you can use linguine or any pasta shape, we have preferred the spaghetti shape.
- Toppings. Sour cream, pickled jalapenos, chilli flakes, more cilantro, Guacamole, Salsa, green onions and more!
How to Make Taco Spaghetti
Cook the Beef Taco Meat
- Start by cooking the ground beef to make the beef taco mixture.
- Since this is a one pot meal, always use an oven safe skillet as this skillet will go into the oven at a later stage.
- Cook the onions and bell peppers in oil until soft and tender, this takes about 5-7 minutes.
- Now add in the lean or extra lean ground beef to the skillet along with the garlic.
- Season the meat with taco seasoning, homemade or store bought. We have included the detailed recipe below if you don’t have taco seasoning.
- Cook the meat over high heat until it has cooked through and no longer pink in color.
- At that point, add in the tomatoes and corn and cook for another few minutes.
- Now the taco mixture is ready.
Adding the Spaghetti
- While you’re making the taco meat, have the spaghetti or pasta of your choice cooking.
- Cook it according to the package instructions and when its ready toss it in the taco mix.
- Toss the spaghetti well into the skillet with the cooked meat and sauce.
Bake To Melt the Cheese
- Now you’ll add a layer of cheese on top of the pasta. Be as generous as you like with the cheese, it’s very personal.
- Bake the dish as is in the skillet just until the cheese melts. You can alternatively broil the dish too, however we love baking it.
- Once out of the oven, garnish it with your favorite toppings.
- Be as simple as sour cream and pickled jalapeño, or as crazy as a Ground Beef Tacos toppings!
- wait for just a few minutes before serving as the cheese will be piping hot.

- Feel free to use store bought taco seasoning or make it at home with the recipe below.
- It’s best to make this recipe in a heavy duty skillet like a cast iron or Dutch pan.
- The skillet needs to be oven proof in order to be a one pan meal.
- Don’t speed up the onion sauté step, it’s essential to give it time. Raw onions can be overpowering, while properly cooked onions have a rich sweet flavor.
- Make sure the beef is cooked well over high heat and no pink is visible anymore before adding the tomatoes.
- If tomatoes are seasonal, use fresh tomatoes for a bright taste. Otherwise your favorite canned ones will work.

You can make the recipe entirely in advance, and wait for it to cool before wrapping it. Freeze it for 3 months and then thaw. reheat in a 350 degree oven, covered with 1/4 cup of water for 20 minutes.
To make in advance, you can prepare the meat sauce up to 3 days in advance. On the day of serving, cook the spaghetti, toss it in, bake and serve.

Instructions

Preheat the oven to 375 degrees F.

Preheat a 9 inch skillet over medium high heat. It’s best to use an oven safe sturdy skillet such as a cast iron.

Add the oil, and begin cooking the onions and bell pepper. Cook for about 5-6 minutes until the onions have softened.

Add in the ground beef, garlic and taco seasoning. Use the homemade mix or store bought taco seasoning if you have on hand. Use the taco seasoning above, leaving about 1/2 teaspoon of it for the sauce later.

Cook until the ground beef has cooked through and no longer pink.

Add in the corn and cook for 2 minutes to soften.

Add the tomatoes, and season.

You can add crushed tomatoes or whole canned tomatoes as well.

Cook until the tomatoes have softened and some of the water has evaporated so the sauce has thickened.

Season with the remaining of the taco seasoning.

Add the cooked spaghetti directly into the skillet with the sauce and toss well to coat.

You can serve the spaghetti as is or wrinkle the cheese on top and place it in the oven for 20 minutes until the cheese has melted.

Garnish with dollops of sour cream, jalapeños, cilantro and green onions. Serve right away.
