TIPS FOR COOKING PASTA:

Before we get started with the recipes, let’s go over the basics of cooking pasta. There are only a few things to remember:

1. Follow pasta box cooking instructions, they usually are spot on.

2. Salt the water for flavor.

3. To keep pasta from sticking together, be sure to have lots of water in your pot, at least several inches above the pasta to allow room for expansion

4. Stir frequently and  do not rinse unless recipe calls for it.

Ten Pasta Recipes with Vegetables!

A little tidbit about this collection: all but one of these recipes is vegetarian, but feel free to round out any of these pasta by adding protein. My go to is adding rotisserie chicken, but you can also add shrimp or salmon. Also, most of these recipes take between 20-30 minutes to make. Bon appetit!

  1. Pappardelle with Wilted Greens. Pappardelle pasta is a long flat noodle. For this recipe we toss the pasta with hearty baby spinach, sweet peas, pine nuts, lemon zest and juice, feta, Parmesan, red pepper flakes and butter! This quick vegetarian dinner comes together in about 25 minutes. 

 

2. Penne Pasta with Tomatoes and Baby Arugula. This 20 minute meal is a cinch to make. While pasta boils you sauté sweet shallots and garlic,  then toss in tender baby arugula (or spinach if preferred), pasta, cherry tomatoes, and fresh dill! Plate and sprinkle with Marcona almonds, feta cheese, sea salt and red pepper flakes. 

 

3. Spring Roll Spaghetti Bowl! Just as healthy as it is beautiful, this pasta dish is loaded with veggies, greens and fresh herbs! To put this pasta salad over the top we drizzle it with a delicious sweet and spicy asian almond butter dressing made with hints of ginger and sriracha!

 

4. Pasta with Brussels Sprouts and Pancetta: This meal is easy to make, loaded with Brussels sprouts (a pound of them to be exact), is incredibly flavorful, and cooks up in less than 25 minutes!

5. Whenever I make this creamy Fettuccine with Tomatoes and Burrata Cheese, I am one happy camper. Fresh, flavorful, easy to make, and budget friendly, this pasta is swoon worthy.

 

6. When my kids lived at home they begged for this Linguini with Bell Peppers and Serrano Chilis. Now that they are grown they still make it themselves and the grandkids love it!

 

7. This Farfalle with Roasted Butternut Squash and Caramelized Onions is also a family favorite! 

 

8. This Herbed Pasta with Cauliflower and Chicken is a little deceptive. It may not look like it, BUT it’s loaded with flavor and cauliflower!

 

9. This Tortellini with Spinach, Chicken and Tomatoes  is a simple recipe made in about 30 minutes, it’s loaded with tender chicken, baby spinach and vine ripened tomatoes, and it’s pretty!

 

10. This recipe is easy, beautiful, delicious, budget friendly and made in about 20-25 minutes. It can be a main course or served as a side to protein, I call it One Pot Pasta with Broccoli and Parmesan…because that’s exactly what it is:)
