Most of us don’t think too often about what we’re having for breakfast. It’s easy to get into a routine, especially when you have a thousand things to do first thing in the morning and never enough time. But one of the best ways you can improve your mood for the rest of your day — and even get your whole week off to a good start — is by making something delicious and seasonal first thing in the morning.
That’s why these fall breakfast recipes are so great for Meatless Monday. We love that they’re full of protein and flavor, for a satisfying and filling breakfast that gets you going first thing.

1. No Bake Apple Bars

With apples being a fall staple, you’d think apples and fall breakfast would go hand in hand, but that doesn’t seem to case. Well, here’s us making the case–prep up these no bake apple bars on Sunday and there’s your brekky for the week. The warm, pumpkin pie-type spices add just the right amount of flavor; we’ll let you decide if you want to include chocolate chips or not.
2. Pumpkin Chia Seed Pudding

If you love pumpkin spice but need something a bit easier to throw together first thing in the morning, we suggest our pumpkin chia seed pudding. Coconut milk, maple syrup, and pumpkin unite for a richly flavored pudding full of the aromas of autumn. And perhaps best of all, you can make these the night before.
3. Sweet Potato and Apple Bowl

Shake up your breakfast with something new, a sweet potato and apple bowl. Sauteed apples that get all sweet and caramel-y dot the top of a creamy sweet potato mash. Top it off with yogurt, a drizzle of almond butter, tahini, or peanut butter and you have yourself a meal.
4. Pumpkin Muffin

For a fall breakfast recipe that doubles as a snack, there’s nothing better than a tasty — and healthy — pumpkin muffin. Our recipe is vegan and gluten-free–made with almond flour and gluten-free oats and sweetened with coconut palm sugar and apples, these muffins are just as delicious as they are nutritious.
