Do you enjoy a good sweet potato? I do and I often steam a batch of 4 or 5 them at one time in my Instant Pot to eat throughout the week. I eat the sweet potatoes as needed- sometimes plain or with toppings or adding sweet potato to a variety of recipes.

  •  Bake a sweet potato, split it open, scoop out a little and fill generously with colorful healthy toppings such as:  black beans, corn, diced tomatoes, avocado slices, and chopped fresh cilantro.
