Who’s in the mood for the simplest, easiest no bake chocolate oatmeal cookies on the market? What market you ask? Erm… the no bake cookies recipe market. Or something.

Okay, so that didn’t make any sense, but just 4 simple ingredients for the tastiest no bake oatmeal cookies will. Lol.

I may not be as sharp this morning as I was when I came up with this recipe, but one easy kitchen adventure, one tasty bite, and one eyebrow-raise later, you’ll see what I mean about these no bake cookies being the best. Are you ready to whip up a batch? Let’s do it!

4 Ingredients for No Bake Chocolate Oatmeal Cookies

  • Peanut butter: you can use creamy JIF-style peanut butter or unsalted, natural peanut butter.
  • Pure maple syrup
  • Rolled oats: also known as old-fashioned oats
  • Unsweetened cocoa powder

How to Make Healthy No Bake Oatmeal Cookies

Line

Grab a baking sheet and line it with parchment paper.

Whisk

Add peanut butter and maple syrup to a large, microwave-safe bowl. Whisk the two ingredients together.

Heat

Now, heat the sweetened no bake cookies mixture until fluffy–this means that tiny little bubbles have formed. The mixture will have a delicious aroma and have dried up a bit.

Once the sweet mixture has dried out, go ahead and whisk until it’s smooth again. Like this…

Add

Add rolled oats and cocoa powder to this mixture and stir it altogether.

Once the cocoa powder has been thoroughly mixed into your no bake cookie dough, it’s ready for scooping! You’ve just made your healthy no bake oatmeal cookie dough!

Scoop the Healthy No Bake Cookies Mixture

Using a nifty cookie scoop, scoop and drop balls of no bake cookie mixture onto the prepared baking sheet.

Flatten No Bake Oatmeal Cookies

Using a fork, flatten cookie balls until desired thickness. Here, I like to press any stray bits of oats and whatnot together for a cohesive cookie. This will help the cookies set better in the fridge!

How to Store These Healthy No Bake Oatmeal Cookies

Room Temperature

Great news! These healthy no bake oatmeal cookies keep for up to 1 month! Just make sure to store your cookies in an airtight container, away from direct sunlight and heat sources to avoid spoiling them.

Freezer

  • Line a baking sheet with parchment paper or wax paper. Set aside.

  • In a large, microwave-safe bowl, add peanut butter and maple syrup. Whisk together until well mixed.

  • Heat in 20-second increments in the microwave until warm and fragrant, and the mixture begins to dry out and become fluffy (about 4-7 rounds). Whisk in between heating increments. *Stovetop instructions in Notes.

  • Add oats and cacao powder to the peanut butter mixture. Stir and fold until thoroughly combined.

  • Using a medium cookie scoop, scoop and drop balls of cookie dough onto the prepared baking sheet, evenly spaced apart. Using a fork, flatten cookies to desired thickness.
  • Chill in the freezer for 15-25 mins, until firm. Enjoy firm, or allow to thaw for 10-15 minutes. Cookies will become soft and chewy at room temperature. Storing instructions below.
