What makes this the best guacamole you’ve ever made? This has a unique combination of flavors of grilled corn and it gets topped with cotija cheese. It is perfect for dipping chips in!
I’ve never had guacamole like this, and I’m just used to the regular which in my mind is avocado, onion, cilantro, salt, pepper, and lime juice. This guacamole recipe had roasted corn in it and cotija cheese on top. The roasted corn made it really sweet and the salty cheese on top made it even better. If you’ve never had cotija cheese, it’s kind of like a Mexican parmesan cheese. If you can’t find that sub parmesan cheese or feta cheese. Don’t be frightened by the white cheese on top. 🙂

Ingredients for Guacamole
- Fresh sweet corn–Get this from a local farmer’s market if possible!
- Jalapeno –for some heat
- Fresh California Avocados–A ripe avocado will have a dark green or black skin. However,it’s important to note that the color alone is not always a reliable indicator of ripeness.
- Pico de Gallois fresh tomatoes,onions,jalapeño peppers,cilantro,lime juice,and salt. Make your own or get a container of pico de Gallo at the store.
- Lime juice –adds a nice hint of citrus flavor
- Cilantro –A lot of people think cilantro tastes like dish soap so if you’re one of those use freshly chopped parsley instead.
- Garlic cloves – Chopped fresh garlic can take some time to chop so I often always use the freshly minced garlic that comes already made in a jar.
- Kosher salt and black pepper–always to taste
- Cotija cheese for garnish–can also be crumbled feta cheese

How to Make the Best Guacamole
Roast the corn and jalapeno over the fire (either on a gas stove or on a grill) until blisted and charred on all sides.
(not burned please)
After cooling for a few minutes,cut the corn off of the cob. Chop the avocados the mix in the pico de gallo.
Seed and mice the roasted halapeno. Add the jalapeno,fresh lime juice,cilantro,roasted corn,garlic,kosher salt,and pepper to the avocado mixture. Adjust seasonings and serve. Garnish with Cotija cheese.
What can I serve with guacamole?
Guacamole can be served with a variety of foods such as tortilla chips,sliced vegetables (e.g. carrots,cucumber,peppers),crackers,pita bread,or as a topping for tacos,nachos,burgers,or sandwiches.
It is also a great addition to salads or as a dip for grilled meats. To make a full meal,guacamole can be paired with rice,beans,and grilled chicken or fish.
