Ingredients
SPICY QUESO CRUSTED SHRIMP
- 9oz shrimp, peeled and deveined
- 2 bags Quest Spicy Queso Tortilla Chips
- 1 egg, whisked
- 2 tbsp gluten free flour
- 1 hot red pepper, thinly sliced
- 1 green onion, thinly sliced
Method
- Preheat the oven to 375°F and line a baking sheet with parchment paper.
- Place the chips into a food processor and pulse until fine crumbs form. Transfer the crumbs to a shallow bowl.
- In a second shallow bowl, add the whisked egg and place the flour in a third shallow bowl.
- Coat each shrimp in the flour, shaking off any excess. Dip the floured shrimp into the egg mixture, then coat thoroughly in the chip crumbs, pressing gently so the crumbs adhere.
- Arrange the coated shrimp on the prepared baking sheet. Repeat with the remaining shrimp.
- Bake for 7–9 minutes, or until the shrimp are cooked through and golden brown. Garnish with hot peppers and green onion and serve with your favorite queso.
